Laurie Anderson & Antony Hegarty - Strange Perfumes

Homemade Poutine

Fen and I made this awesome poutine from scratch. We changed it up a lil' and added sweet potatoes, cheddar and caramelized onions. It was heavenly.

Step 1. Wash and cut a whole bunch of potatoes and one large sweet potato. Lay them on a large pan, coat and toss with oil (we used olive oil and you could taste in the end, so use another kind if you don't like olive oil), lots of salt and some pepper.

Step 2. Bake at 400 degrees F for about 20 minutes or more until they're soft and a lil' crispy. We also broiled them near the end because they weren't crispy enough for us.

Step 3. To make the gravy, I mixed together a bouillon cube, some butter, water, garlic, dijon mustard and potato starch. It was delish.

Step 4. Caramelize them onions. We used oil, butter, maple syrup and balsamic vinegar.

Step 5. Take the potatoes out of the oven, pour the gravy on top and scatter some curd. We also grated some cheddar cheese on top.

Step 6. Put it all back in the oven until the cheese is melted. Scoop into bowls and top with caramelized onions.

bon appétit!
